Single-serve low-carb muffins can make a great snack or breakfast with the Trim Healthy Mama, low-carb, or keto lifestyle. These have an extra power boost with the baobab addition. My favorite part is that the berry tastes come out just perfectly and adds a scoop of freshness!
The only extra step with these single-serve low-carb muffins is going to be whisking the eggs first. After the eggs are whisked, you can combine the rest of the ingredients and bake away!
I am using Monk Fruit in this recipe, but other low-glycemic sweeteners will work fine as well. My go-to sweeteners are Gentle Sweet (stevia-based) or monk fruit, but there are others that will work well also. You can learn more about sweeteners in this post, it includes a 5-day sugar challenge!

Ingredients
- 2 large eggs
- 4 tablespoons water
- 2 tablespoons coconut oil
- ½ cup low-carb baking blend
- ¼ cup Gentle Sweet or stevia blend
- 2 tablespoon baobab powder
- 1 teaspoon aluminum-free baking powder
- ¼ cup berries (blackberries, blueberries, raspberries)
Instructions
Preheat the oven to 350.
Lightly coat your ramakins with coconut oil spray.
Whisk eggs in a small bowl.
Add remaining ingredients and mix well.
Divide into two ramakins.
Bake for 15-17 minutes.
Hint: I love baking this in a ramekin with a lid so I can directly place any leftovers in my refrigerator. Although I cannot link the exact ramakins that I use, these are almost identical!

Are Berries Trim Healthy Mama Friendly?
Berries are absolutely Trim Healthy Mama friendly! I was just talking about berries with my latest THM coaching group. Berries are a FP in the THM world and can be used in both S and E settings. The only place they are not suitable for would be in a deep S setting.

How long do these Keep?
You won't be able to keep them for more than a day anyway so why even ask? I'm kidding of course! However, these do need to be refrigerated. This dries them out a little bit, so I would recommend that you only leave them in the refrigerator for 1-2 extra days.
How many Muffins will this Make?
The ramakins that I used for this recipe are actually quite good-sized. This will make two large single-serve muffins. You can cut the recipe in half if you would rather just make one. I like having two so I can share with my preschool-aged boys. You can find similar ramakins to the ones that I used in my pictures here. They are adorable and I love the cover on them!
