I think it's safe to say that these are remarkably close to the version I had in that restaurant. These keto Brussel sprouts are going to be slightly browned, sweet & sassy, with a lovely vinegar bite right at the end. You won't be disappointed with these!

Once upon a time, I used to hate Brussel Sprouts! I'm pretty sure that it was mostly a mental thing, not a taste thing; but regardless I would not eat them. Now, I sort of wonder at my insanity, because when these little things are made correctly they are extraordinary! Eat them sweet or savory; there is no right or wrong way! Keto Brussel Sprouts are an excellent option as a side dish for practically any meal.
What do Brussel Sprouts Taste Like?
What I didn't realize when I 'hated' Brussel sprouts was that they taste quite similar to vegetables that I know and love. I like to tell my three-year-old that Brussel sprouts are a combination of broccoli and cauliflower. Those are two vegetables he loves, yet the kid still turns his nose up at Brussel sprouts, I supposed I'll keep working on my convincing skills!
Honestly, the texture is different, but I think these keto Brussel sprouts taste like a very yummy combination of a broccoli and cauliflower flavor.
Are Brussel Sprouts Good for you?
Brussel Sprouts are not only delicious, but they also have some amazing benefits! Only one cup contains 25% of the vitamin C that we need per day. They are also high in fiber, vitamins, minerals, and antioxidants. Vitamin C and vitamin K may reduce or help combat cancer. Needless to say, they are certainly good for you!

Are Brussels Sprouts High in Carbs?
These little circle vegetables are not going to be super high in carbs. They contain about 4 grams of digestible carbs per serving but remember if you are following a Trim Healthy Mama lifestyle, we do not count the carbohydrates in vegetables. How to Prepare Keto Brussel Sprouts
I have a confession to make. Sometimes I forget to wash my fruits and vegetables. The last couple of times I have made these Keto Brussel Sprouts, it was not until we were sitting down to eat them that I remembered they had not been washed! It's probably a good idea to wash your produce, so do what I say, not what I do!
Besides washing these, you will need to chomp the Brussel sprouts and then add the remaining ingredients. I especially like to keep my side dishes simple and easy to create!
If you have never used Swerve Brown sugar before, it is a stevia-based brown sugar that occasionally can be used on the Trim Healthy Mama plan.
Using Chomps in the Keto Brussel Sprouts
When I was experimenting with this recipe I ran out of bacon bits. My thought was just to make without once or twice, and then I had an idea, what about Chomps? It must have been a stroke of genius because utilizing Chomps in these is AMAZING! The flavor that I recommend using is the Italian flavor, which I think comes very close to tasting like bacon!
How to Cook Brussel Sprouts in the Oven
Don't set the oven below 425 degrees! This is one of the secrets to getting perfectly cooked Keto Brussel Sprouts. You want that oven nice and hot before you put them in.
Oven cook times will vary according to the oven, but you will want to start with 15 minutes and then increase the time if the Brussel Sprouts are not starting to brown around the edges.
Once they come out let them cool for just a bit and then dive in and enjoy!

Brown Sugar Keto Brussel Sprouts
These keto Brussel sprouts are going to be slightly browned, sweet & sassy, with a lovely vinegar bite right at the end. You won't be disappointed with these!
Ingredients
- 12 ounce bag of Brussel sprouts
- 2 tbsp Swerve Stevia brown sugar
- 2 tbsp apple cider vinegar
- 3 tbsp olive oil
- Mineral salt
- 4 ounce bacon bites
- or
- 5 bacon diced slices
- or
- 1 Italian Flavored diced CHOMP stick
Instructions
- Slice Brussel sprouts in half and lay flat on a baking sheet on a greased baking sheet.
- Drizzle the apple cider vinegar and olive oil over the Brussel Sprouts.
- Add the bacon or Chomp sticks over the top.
- Spread the Stevia-based brown sugar over everything.
- Bake at 425 for 20 minutes.
