Yesterday was my dad's birthday. He turned a whopping 67 years old! We celebrated with a party at our house complete with gifts, desserts, grilling, friends, and family.
My contribution to the dessert section was this no bake sugar-free cheesecake. This is the cheesecake that I made when I want to bring something that is gluten-free, sugar, free, and still meets deliciousness standards.
This basic no-bake sugar-free cheesecake is the ultimate easy cheesecake that is gluten-free. sugar-free, and low-carb. You won't just want one slice! It's that good. You can vary your toppings based on the occasion.
Plums are in season, so my birthday cheesecake was decorated with sliced plums and topped with a plum glaze. During the cheery season, a cherry topping would be delicious. Strawberry toppings are always a good idea in my opinion. Even a chocolate glaze would work with this basic sugar-free cheesecake.

How Many Carbs are in my Basic Sugar-Free Cheesecake?
This sugar-free cheesecake comes in at a whopping 2 whole carbs! Yes, you read that right! The reason for this is that there is no crust! The cheesecake holds together just fine without one, but you certainly could make a crust if you desire.
I typically like to create either a crust like this one in my rosemary cheesecake or use any of the crust recipes from the Trim Healthy Mama cookbooks.
Baked versus no Bake Cheesecake
What is the difference between a baked or no-bake cheesecake? Don't get me wrong, I like a good New York cheesecake just as well as the next person, but the truth in the matter is that a typical cheesecake can be very difficult to get just right.
A baked cheesecake uses eggs to help the filling set therefore cracks in the cheesecake are very common and the setting of the cake can be hard to get just right.
This does not mean that I do not make baked cheesecakes! I love to make a good baked cheesecake, it's just that they require a bit more work and careful attention to get just right.
A no-bake cheesecake with gelatin requires very little skill or baking knowledge to get right.
The ingredients are simple and the method is easy.
Not to mention that kids love to 'help' in the process.
How to Make my Sugar-Free Cheesecake
Sprinkle gelatin in ½ cup of water. Set aside to let bloom.
Meanwhile, take your room temperature cream cheese and place it in a stand mixer.
Using a whisk whip it until smooth.
Slowly add your cold heavy cream and whisk for about 1 minute on medium speed. Add vanilla, Gentle Sweet, and mineral salt.
Add bloomed gelatin to the mixture and whisk on medium speed for 2 minutes or until peek.
With a spatula scrape it into a Spring Foam pan.
Place in the refrigerator for at least 2 hours to let the gelatin set. I prefer overnight.
Ingredients for the No Bake Sugar-Free Cheesecake
3 packages of Cream Cheese
2 cups cold heavy cream
1 cup Gentle Sweet
½ cup cold water
2 tablespoon gelatin
2 teaspoon vanilla
¼ teaspoon mineral salt
My Top Tip!
My top tip for this recipe is to let the cheesecake sit in the refrigerator for a full 2 hours, but I honestly prefer overnight. It seems to make a difference to let the cheesecake sit longer.
Sugar-Free Cheesecake Topping Ideas
There are many different cheesecake toppings that you can use for this basic sugar-free cheesecake. Don't think too hard! It does not need to be too fancy!
Fruit Ideas
- Cherries
- Plums
- Strawberries
- Raspberries
- Blueberries
- Blackberries
Many of these fruits can be made into a glaze similar to how I made the plum glaze. Be creative and have fun with your fruit toppings.
Other Topping Ideas
- Chocolate Glaze
- Ganache (Wonderfully Made, Dearly Loved has an excellent recipe)
- Herbs (like rosemary!)
Basic No Bake Sugar-Free Cheesecake

- 3 packaegs of Cream Cheese
- 2 cups cold heavy cream

FOR PLUM GLAZE
For a basic plum glaze, take 3 cups of small wild plums (about 1 inch in diameter) and place whole plum in at medium heat. Heat until plums start popping. Mush the plums and strain pits out. You can strain skins out as well if desired. Add ¼ cup Gentle Sweet and mix together. Pour onto the cheesecake.
