This recipe was inspired by the popularity of our lime cheesecake bars. Both recipes were made to be easy, quick, and delicious. The lime bars were made specifically to be a special treat for an Easter celebration. Likewise, the strawberry cheesecake bars were specifically produced to be a special treat leading up to Valentine's Day.
However, both sugar-free treats would be a refreshing dessert for the summer season! I especially am eager to try the cheesecake with fresh strawberries during strawberry picking season!

Ingredients
Crust
- Almond flour
- Softened butter
Filling
- Cold water
- Gelatin
- Hot water
- Softened cream cheese
- Heavy whipping cream
- Gentle Sweet
- Fresh strawberries, sliced (keep some for garnish)
Please note - All my recipes are inspired by the Trim Healthy lifestyle. As a result, they are all sugar-free and are generally sweetened with Gentle Sweet. You can substitute any sweetener including normal table sugar if desired.

Instructions
Although the recipe might look a bit more complicated, I assure you that it's one of my more easy recipes! Make the crust, make the topping, and throw on some sliced strawberries! Trust me, you won't regret making this delectable strawberry dessert!
Process the almond flour and butter in a food processor or blend until wet crumbs form. Press into the bottom of a 9x13 baking dish.
Bloom the gelatin. Sprinkle the gelatin over the cold water in a small bowl. Let rest for 3 minutes. Add the hot water and stir until the gelatin dissolves.
Slice strawberries and set aside 12 slices for garnish.
Add the cream cheese to the food processor. Pulse until smooth. Add the bloomed gelatin, heavy cream, sweetener, and sliced strawberries. Pulse until smooth, scraping down the sides as needed.
Drop spoonfuls of the cheesecake on top of the crust. Spread smooth. Refrigerate at least 3-4 hours to set.
Top with sliced strawberries. Serve chilled.
Hint: remember to remove any chunks of gelatin that don't dissolve.

- Swap almond flour for graham cracker crumbs for a more traditional cheesecake flavor.
- Use coconut oil instead of butter for a dairy-free option.
- Replace Gentle Sweet with maple syrup or brown sugar for a different sweetness profile.
