- Preheat the oven to 375 degrees F. Prepare a 10x13 inch baking dish or skillet of choice.
- Brown the sausage or ground pork. Set aside.
- In a blender mix together cottage cheese, eggs, milk, seasonings and softened butter (optional).
- Combine egg mixture, cheese, and the sausage/ground pork. Gently mix in the arugula/spinach.
- Bake in the preheated oven for 45 minutes or until golden brown.
Hint: I'll always believe that farm-fresh eggs are the best for these types of recipes! You will start to taste a difference if you use farm-fresh eggs for a long time and suddenly go back to store-bought!
