Sweet Potato Patties have been on my list of 'recipes' to make for a long time, but I kept delaying it for several reasons. I suspected that it was one of those recipes that 'the bloggers' made look easy, but really was tough to perfect. I also suspected that they were not particularly appetizing. After all, it takes a talented photographer to make sweet potato patties look appetizing.
I'm thrilled to say that I was wrong on all accounts. These Sweet Potato Patties are easy to make and truly scrumptious! The curry seasoning is what elevates it into deliciousness! If you've ever wanted to try patties, these are the ones you are going to want to grab the recipe for!

Sweet Potato Patties
Sweet potato patties are not only delicious they are quite a bit easier than I ever would have anticipated!
If you live the Trim Healthy Mama lifestyle, these make a wonder E side dish or snack. I have actually been enjoying them as an early morning breakfast lately!
If you are going to include them as a main meal, you will need to include some protein. This honestly will you better as a side dish than a meal. Here are a few ideas for your protein source.

Can you Freeze Sweet Potato Patties?
I do not recommend freezing these patties. They tend to get freezer burn very easily because they are so moist. However, they do keep in the refrigerator quite well for up to 2 weeks.
Ingredients for the Patties
1 large egg
1 tablespoon nutritional yeast
½ teaspoon pink sea salt
¼ teaspoon black pepper
½ teaspoon curry powder
¼ cup blanched finely ground almond flour (1 oz)
1 12 oz page of microwavable sweet potatoes
How to Make Them
- Pre-Heat the oven to 400 degrees and line a baking pan with parchment paper. Spray with coconut spray.
- Start by microwaving the sweet potatoes according to the package directions.
- Meanwhile, combine the egg, sea salt, nutritional yeast, black pepper, and curry powder, mix well.
- Add the almond flour and combine again. Once the sweet potatoes are ready you can add them directly to the egg mixture.
- Smash the sweet potatoes with a fork until they are the consistency of mashed potatoes.
- Using an ice cream scoop, or the equivalent, scoop the potatoes into 6 patties.
- Flatten them into patties.
- Bake at 400 degrees for 15 minutes.
- Flip them and then bake for another 15 minutes.
- Once golden brown on both sides let them cool for 5 minutes and serve right away.
