I love ordering egg bites from Caribou Coffee. Oooh, they have perfected that recipe. But as usual, I wanted a look and taste-like recipe that was Trim Healthy Mama friendly. These Instant Pot egg bites did just the trick. Let me tell you, they come close to the Caribou Coffee version! You are going to love the gouda and bacon combination! Nothing quite beats the ease of waking up and throwing a couple of these delightful bites into your mouth as a simple and easy breakfast.
Have you ever heard of Sous Vide eggs? I had not either until I started researching copycat recipes for the Caribou Coffee Bacon Gouda Souffle egg bites. For those that don't have Caribou Coffee around, these would be like Starbucks egg bites. So, what do they contain? They are a combination of cottage cheese, eggs, Monterey Jack cheese, and bacon! Quite honestly, they make the perfect Trim Healthy Mama recipe. Full of healthy and delicious fats.
For this recipe, we are going to duplicate a similar recipe to Starbucks Sous Vide eggs. However, I was more interested in creating something that tasted like the Caribou Coffee Bacon Gouda Souffle, which will taste a little bit different than Starbucks.
One of the reasons that I love the Caribou Soufflés is because of the perfect pairing of ingredients that create a healthy greasy taste. "Healthy greasy taste," is that a thing?! I'm going to stick with it because that's the best way I know how to explain it! You get a healthy egg bite that tastes naughty!

Eggs
Cottage cheese
Shredded gouda cheese
Chopped cooked bacon
Frozen spinach
Nutritional yeast (optional)
Instructions
There are a few other things that I should mention before I come to the full Instant Pot Egg Bites recipe. The first is that I LOVE using an immersion blender for this type of recipe.
You might think I'm crazy, but I HATE cleaning my blender. It's so clunky and there are so many parts. I know there are many people out there that just can't get enough of using their favorite blender, but I am not one of those people! If you hate cleaning, your blender, try this for your blending recipes!
Add one cup of water to the bottom of your Instant Pot. Place the metal trivet in the bottom.
Add all the ingredients into a mixing bowl. Using an immersion blend (alternatively, you can use a blender) blend all the ingredients together well.
Fill an egg-bite silicon pan with a mixture. You can fill it right up to the top.
Set pressure and cook on manual for 10 minutes. Make sure the Instant Pot depressurizes before you take the egg bites out. These can be stored in the refrigerator for up to one week.
Hint: If you like your eggs firmer, let the Instant Pot do a natural depressurization. If you like your egg bites less firm, you can do a quick release.
Substitutions
There are two substitutions that I commonly make with this recipe.
- Greek Yogurt - if you happen to be out of cottage cheese, Greek Yogurt will work fine as a substitute.
- Other cheeses - Gouda cheese makes this recipe incredible! However, you can substitute any variety of cheese that you like.
Equipment
There are two pieces of necessary kitchen utensils for this recipe. You will need an Instant Pot or similar pressure cooker of your choice and an Egg Bites Silicone Pan. I like this silicone egg bite pan because it comes with a cover so I can just place them in the refrigerator as is.

FAQ
Can you stack silicone egg molds in an instant pot?
Yes! You can stack the molds. I have not done so yet, but it is a widespread practice to cover them with aluminum foil and gently stack them on top of each other. I would recommend getting a sling if you are going to do this. The sling can also come in handy when you are making Instant Pot Cheesecake or other things that need to be lowered into the pot. Nana's Kitchen has an easy 4 ingredient recipe for this!
How long do egg bites last in the fridge?
I would recommend that you do not keep these in the refrigerator for longer than a week. But trust me, they probably won't last that long anyway. They are THAT good!
If you do keep these Instant Pot egg bites in the refrigerator, make sure that they are covered. If you leave them uncovered, they will dry out.

Notes
I recommend a quick release on the Instant pot. However, I have forgotten about it on more than on occasion and if you do a slow release it won't hurt them!
