This recipe was inspired by a Christmas present! On one side of our family, we typically do a Christmas gift exchange. We all bring a guy or girl present and in a game, format compete for the gifts.
This year was no different, but the event was postponed because a family member received a covid diagnosis. Then on our rescheduled date, another family member came down with the same thing. By that time it was mid-January, and the event has yet to be rescheduled.
Last weekend, I saw the wrapped present sitting in my closet and decided that someone needed to enjoy its contents. With the help of my eager two and three-year-old, we unwrapped the package to unveil a beautiful copy of JoAnna Gaines Magnolia Table.
Wait a minute Rachael, don't you live a Trim Healthy Mama lifestyle? What are you doing with a non-THM cookbook?
True, but I still appreciate the beauty of everything Mrs. Gaines does, not to mention the photography is phenomenal and the recipes are inspiring.
And that last part is what inspired this recipe! There was a quiche recipe in the cookbook that was completely off-plan for a Trim Healthy Mama, but with a little bit of dreaming and experimenting, this recipe was born. It is nothing like the recipe in Magnolia Table, but it was certainly inspired by the photo!
Ingredients
Crust
- Unblanched almond flour
- Egg white
This combination is great for any number of recipes. It doesn't create a fluffy flaky crust, but it does the trick quite nicely!
Filling
- Eggs
- You can add or subtract how many eggs you use based on your family size.
- Unsweetened almond milk
- Almond milk is a nice way to get a creamy flavor but without a lot of extra dairy.
- Shredded Mexican Cheese, Havarti Cheese, and Parmesan cheese
- Honestly, you can use any combination of cheese in this recipe. I do find this combination very good.
- Diced garlic
- Onion powder
- Dried basil (additional for topping if desired)
Instructions
Preheat oven to 350 degrees
Combine the almond flour and large egg white together. Thoroughly mix.
Spray an 8-inch round pie baking dish with coconut spray.
Press the crust into the pie dish until it covers the bottom completely.
Bake for 10 minutes, remove, and let cool.
Combine the remaining ingredients and whisk together.
Pour into the cooled crust and bake for another 45 minutes at 350 degrees.
This recipe is best eaten the day it was made. However, you can also store it in the refrigerator for up to one week.
Hint - This alternatively can be made in a cast-iron skillet. If you use that option, make sure to pre-heat your skillet during the oven preheating time.

Substitutions
Many quiche recipes call for sour cream. This one does not. However, if you are attempting to recreate a favorite recipe that calls for sour cream, here are a few alternatives.
There are a few alternatives that will still give you a good creamy taste. I used 1 cup of almond milk in this recipe and it worked perfectly. Unsweetened coconut milk or any other unsweetened nut milk will work fine.
Storage
You can store this quiche in the refrigerator for up to one week. Although I recommended eating it on the same day it is made, sometimes you end up with leftovers! Just make sure it is covered and placed in the refrigerator. If you would like to freeze it, wrap it tightly with plastic, place it in an airtight container, and freeze it for up to one month.
I recommended a week if you store it in the refrigerator.

How do you make a low-carb crust?
The recipe for the low-carb crust has been kicking around the internet for quite some time. At this point, who knows who originally came up with the easy alternative? All you need is one cup of unblanched almond flour and one large egg white. I actually had a turkey egg and used that for my large egg white!
Is a quiche good for weight loss?
A quiche can make an excellent healthy breakfast especially if you reduce the carbohydrates with a more appropriate crust. For those eating the Trim Healthy Mama lifestyle, I would offer one caution. Almond flour is a very dense option. Although we do not count calories, it is a calorie-dense option. This probably is not going to be a 'sweatpants' option where you consume it every day of the week.
I enjoyed the leftover for two days and I will probably not make this again for at least a few weeks.
Are quiches high in carbs?
This is often a misleading question because there are so many different recipes for quiches. A traditional quiche will have a traditional pie crust, which will have a lot of empty carbs present. A crustless quiche will have very few, yet there is something quite delicious about having a crust in a quiche.
