I hate to say it, but I'm a wee bit spaghetti squash obsessed. I think I realized it when I was working on the free Healing Home Harvest Cookbook and had to take out some spaghetti squash recipes, otherwise, that is all it would have been! I'm obsessed with this vegetable that is such a versatile vegetable to use. It goes great in skillet meals, casseroles, and as you will see, even as a spaghetti squash breakfast casserole! What can't this vegetable do?!
How to Cook Spaghetti Squash
There are several different ways to cook spaghetti squash, but I'll tell you the way I think is the easiest! For most spaghetti squash recipes, you will need to pre-bake the spaghetti squash before you add it to anything else. Pre-heat the oven to 350 degrees, cut the squash in half, scoop out the seeds with your hands on a spoon, place them on a baking tray, and bake for 30 minutes. Spaghetti Squash Breakfast Bake
It seems like you either love spaghetti squash, or you hate it. My husband just happens to be the later. Yet we have figured out how to master the balance of having a hater and lover of spaghetti squash in the house. One of my compromises, when I make spaghetti squash, is that it has to basically be sinfully dripped with delicious fats. No plain spaghetti squash around here much to my chagrin.
So you have to know that this spaghetti squash breakfast bake is truly filled to the brim with delicious cream cheese and other scrumptious fats. It's ooey, gooey, and exactly right for guys that like their 'meat and potatoes.
Easy Peasey Spaghetti Squash Breakfast Casserole
After you get the spaghetti squash cooked and removed from the shell, this recipe comes together very fast, it is simply blending the ingredients in a food processor, and then combining it all together. A simple and effective recipe for breakfast, or an evening meal!

Spaghetti Squash Breakfast Bake

Ingredients
- 1 small cooked spaghetti squash
- 6 oz bacon bites
- 1 ½ cups frozen okra
- 1 8oz package of cream cheese
- 3 eggs
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon mineral salt
Instructions
- If you have not done so, cook the spaghetti squash and remove the squash.
- Place okra, cream cheese, eggs, and seasonings into a blender or food processor and blend until well combined and the okra is barely seen.
- Combine all ingredients together and cook at 350 degrees for 30 minutes.
