They are as close as I've ever come to getting a sugar-free cookie to taste like the sugar-filled kind that we are all used to around the holiday.

I was reading recently in the Trim Healthy Mama Facebook group about Christmas cookies and someone made a comment similar to this:
"Don't even attempt to give me THM-friendly sugar cookies, I've given up on finding something that tastes remotely like the ones I remember."
Sadly I sort of agree with her. It is insurmountably hard to create a sugar-free sugar cookie! However, these sugar-free sugar cookies are sourdough cookies! Sourdough allows THM recipes to taste remarkably close to the old counterparts that many people remember from pre-THM.
Give them a try, you might be surprised!
The dough for this recipe was inspired by my Thumbprint Cookies. When I tasted the dough, I immediately thought that dough tasted like sugar cookie dough!

Ingredients
- unsalted butter (room temperature)
- Gentle Sweet
- Large eggs (room temperature)
- Vanilla extract (It's easy to make homemade!)
- Einkorn sourdough starter discard (room temperature)
- Einkorn flour (whole wheat)
- Fine sea salt
- Baking powder

Instructions
As stated above, this sourdough sugar cookies dough recipe is directly related to my Thumbprint Cookies. The dough recipe is actually the exact same!
A fun trick if you are making these for the holidays is to split the dough and make half into Thumbprint Cookies and the other half into sugar cookies for your children to decorate.
In a stand mixer cream the butter and sugar until light and fluffy, about 2-3 minutes. Add the egg, vanilla extract, and sourdough starter discard, and beat until combined.
Add the flour, baking powder, and salt to the wet ingredients until just mixed. Use a spatula to scrape the sides of the bowl.
Roll dough into a ball and place it on the countertop for at least 7 hours for a room temperature ferment. This step is essential to stay on plan with THM. It is best to chill the dough slightly in order to cut the cookies. If the dough is too hard once chilled, let sit out on the countertop for 30 minutes.
Place into oven at 350 Fahrenheit. Dust a rolling pin with a small amount of einkorn flour OR THM Baking Blend.
With a rolling pin roll out the cookie dough. Using cookie stamps or cutters cut out shapes.
Bake the cookies for 13-15 minutes. Once the cookies have cooled completely, decorate them with additional sugar-free items.
Hint: Make sure you press down HARD on the stamp if you intend to use a stamp. The indentations need to be imprinted very hard.

Substitutions
Yes, you can use any sourdough starter in this recipe. However, you will not get the same results if you use anything different than the einkorn whole wheat flour. The einkorn gives it the best sugar-free flavor.

Storage
Because there are eggs and dairy in these cookies, I recommend storing them in the refrigerator to be safe. However, I personally leave them on the countertop for up to 3 days in an airtight container and then store them in an airtight container in the refrigerator.
Top tip
Share something here that you think is key to making this recipe well, such as: Don't overcook the burgers! Sear the outside and cook to a minimum internal temperature, but they should still be juicy for best results.

Which sugar-free sugar is best for baking?
I continue to think that Gentle Sweet is the best sugar-free alternative you can use in Sugar-Free baking. It gives it the best sweet flavor. You can explore other sweetener alternatives in my sweetener resource.
What is the difference between butter cookies and sugar cookies?
The difference is that sugar cookies are rolled thin and cut out with cutters and/or stamps. Butter cookies are much softer and typically will spread out more when baking.
