The health benefits of pumpkins may just surprise you. Not only can pumpkins be used for cute fall décor, you can eat them! Surprising right (insert a wee bit of a sarcastic tone here)?
Pumpkins are packed with nutrients. They are easily stored in the winter and can be enjoyed in many savory and sweet recipes. Vitamin A shines through at over 200% of the recommended daily intake of vitamin A. It is lower in calories and consists of an impressive 94% of water.
Vitamin A, lutein, and zeaxanthin (don't ever ask me to pronounce those!) may even help fight chronic eye disease.
The pumpkin pie fluff we are about to enjoy was originally made with a fresh pumpkin that was baked in my oven, mashed, and then stored in the refrigerator. Canned pumpkin puree with no sugar added can also be used. Just be sure not to mix the pumpkin puree cans with the pumpkin pie filling cans. There is a massive difference!

Pumpkin belongs to the family of winter squashes called Cucurbitaceae and because of that does have some carbohydrates in it. But please understand that these are healthy carbs! These are the carbs that you want in your body. Healthy carbs will help you flourish and heal.
Is Pumpkin a Low-Carb Food?
One-half cup of pumpkin puree will contain just about 10 grams of carbohydrates. For those on the Trim Healthy Mama plan, this is well inside the limits for a healthy E meal, and it will about cap what you can enjoy with an S meal.
For those that follow the keto lifestyle, the recommended amount of carbs per day varies from about 50 to 100 grams. This is well within the limits to enjoy.

Have I convinced you yet that you need a little bit of pumpkin in your diet? I hope so because it is truly a marvelous squash that deserves a little more praise than just how cute it looks on porches.
Pumpkin can be enjoyed in savory dishes quite nicely, but most often gets used in sweet desserts. Unhealthy sugars ruin the health benefits of pumpkins. This pumpkin pie fluff is going to take the unhealthy sugar versions of pumpkin sweets, and make you never want to let those unholy mixtures touch your lips again!
Pumpkin can actually boost your immune system with its packed nutrients, but large amounts of sugar can shut off your immune system for about a half-hour!
How to Make Pumpkin Pie Fluff Dip
There is a possibility that this is the easiest pumpkin pie dessert ever to be posted on the internet. I'm sure someone out there can prove me wrong, but honestly, that is how I feel! This is such an easy recipe and so beyond delicious for a dessert, Thanksgiving appetizer, or a quick recipe to bring to a party!
If you are staying in Trim Healthy Mama S mode, you will want to enjoy this with a fuel pull cracker or an S cracker. The Beauty Blend Crackers found on page 504 of the Trim Healthy Table is a great option! Another option would be the Swiss Crackers, which are a fuel pull. Those are found on page 457 of the Trim Healthy Cookbook.
How to Store Pumpkin Pie Fluff Dip
It is very easy to store this little recipe. Store in an airtight container in the refrigerator for up to a week. You won't want to freeze this recipe because the water crystals will change the consistency of the recipe.
- 1 cup pumpkin puree
- 1 cup heavy whipping cream
- 1 8oz package of cream cheese
- 1 tsp pumpkin pie extract
- ¼ cup stevia or monk fruit
- Using a mixing stand, add the pumpkin puree, whipping cream, and cream cheese.
- Start whipping on a low speed.
- Once the ingredients are combined, add the pumpkin pie extract and stevia or sweetener of choice.
- Mix until the whipping cream has started to fluff.
- Enjoy with crackers!
