Eating low carbs can really be a tricky business, especially when you need on-the-go snacks that are easy to grab. Granola bars have mistakenly been the McDonald's in the health world for a fast-paced snack or meal. But most store-bought bars are riddled with unhealthy carbs, fats, and sugars.
Finding a tasty low-carb granola bar recipe is hard! It is better if you can find a good sugar-free granola bar recipe as well! This baobab and chocolate low-carb granola bar recipe does both! It is low carb (from Trim Healthy Mama's) and is not riddled with unhealthy sugars.
Ingredients
- Whey protein
- Collagen
- Oat fiber
- Baobab powder
- Stevia blend or Gentle sweet
- Glucomannan
- Raspberry extract
- Unsweetened cocoa powder
- Water
- MCT or coconut oil
These are so easy to make, all they require is a little time and a food processor or blender. You blend together the dry ingredients, and then add the wet ingredients, and wala! The mixture should be a thick play-doh consistency. Add 1 tablespoon at a time to make sure it does not get too wet. I used these molds from Amazon, but you can even just shape them into rectangles yourself!
You can even take the low-carb granola bar recipe and turn it into a protein ball recipe!
Instructions
In a blender or food processor, combine all the dry ingredients well.
Add MCT or coconut oil and blend .Add 1 tablespoon of water at a time and blend after adding each.
The mixture will be like a thick playdoh
Shape into granola bars or use a moldStore in the refrigerator.
Hint: Although it's fun to shape them into granola bars, it's much easier to just make them into little balls!

THM granola bar recipes are abounding, and most of them are fantastic! Joy Filled Eats has an amazing recipe that is a more nut-based granola bar. An amazing THM granola bar that is chewy is from Low Carb Maven, these are great for kids.
THM also has its own granola bars , and as I've said above, they are amazing! I find however, they are a rare treat, and making granola bars for on-the-go tends to be a wee bit cheaper.
The THM granola bars come in two flavors now and the Baobab Biss (pictured and linked below) is certainly my favorite. They also have a chocolate bar that tastes like a healthy tootsie roll!
What is the Best Low Carb Snack Bar?
It's true, there are some really good low-carb snack bars. Trim Healthy Mama recently came out with these amazing Chocolate and strawberry bars. I've tried them both and I couldn't be more pleased with them, but sometimes my wallet doesn't dive deep enough for those indulgences.
Quest bars, moon cheese, and protein puffs have been personal choice products that I have enjoyed on more than one occasion that can be alternative low-carb snacks.

- 1 cup whey protein
- 4 tablespoon collagen
- 4 tablespoon oat fiber
- 4 tablespoon baobab powder
- ¼ + 2 tablespoon cup stevia blend or gentle sweet
- 1 teaspoon glucomannan
- ½ teaspoon raspberry extract
- 2 tablespoon unsweetened cocoa powder
- 5 tablespoon water
- 1 teaspoon MCT or coconut oil
