If you spend time on any of Healing Home's platforms, you may have realized that sourdough has become more of an obsession of late. I've been working on and off again with my einkorn sourdough starter for the last 2 years, but only recently have I chosen to truly invest in the art!
What did it take for me to get serious? I had to invest. Not my time, but my money. I knew it would take that, but I just didn't want to go there for so long. I finally got kicked in gear and invested in a wet einkorn sourdough starter from a lady on Etsy. You can find the exact sourdough starter I purchased here.
Why einkorn? Mostly because it is an ancient grain that is gentler on blood sugar than most flours. Trim Healthy Mama approves the use of their plan.
Fast Sourdough Pancakes
I'm happy to report that you can create tasty sourdough einkorn pancakes without souring overnight! All it takes is some sourdough starter. Using a starter that is already created eliminates the need to sour overnight because it obviously is already fermented! All my THM friends just rejoiced!
Your sourdough starter needs to be fed for at least 12 hours before making this recipe.
You will need two cups and it does not even need to be a warm starter. As long as it has been fed and allowed to ferment for at least 12 hours prior to entering the refrigerator, you are good to go! Grab it warm or cold; as long as you have two cups you can fire away with trying this recipe!
Tips for Making My Einkorn Pancakes
- Make sure the starter has fermented for at least 12 hours before making, this is mostly to ensure that these are a true THM dish.
- If you plan to add chocolate chips or blueberries, add them to the uncooked side of the pancake while the other side is cooking on the skillet or griddle. This is done to prevent sticking.
- Preheat your skillet or griddle. If you plan to use a skillet use coconut oil to prevent sticking. The best way to do this is to add a dollop of coconut oil and then place your batter right on top of that. If you are making the pure E version, too much oil will push this recipe into a crossover. I recommend if you are trying to keep it in E mode use a griddle.
- Don't add the baking soda until right before cooking. You can make the rest of the batter ahead of time. There is a chemical reaction that takes place with the baking soda that helps make these pancakes fluffy and delicious.
- The key to these pancakes is to only flip them once. Make sure the uncooked einkorn pancake's side is full of bubbles before flipping over to cook on the other side.*
Ingredients for Einkorn Pancakes
2 cups einkorn sourdough starter
4 egg whites
2 tablespoon melted coconut oil, 2 tablespoon water
1 teaspoon Gentle Sweet
½ teaspoon salt
1 teaspoon baking soda
coconut oil for frying
Crossover Adjustments -
If you plan to make this into a crossover (which is super scrumptious) add 2 eggs instead of 4 egg whites and 2 tablespoon melted coconut oil plus 2 tablespoon water instead of ¼ cup of melted coconut oil.
How to Make Sourdough Pancakes
- Mix the starter, eggs, coconut oil, Gentle Sweet, and salt in a bowl.
- Make sure to stir in the eggs completely.
- Add the baking soda last, and watch the starter foam up.
- If you are using a skillet make sure to pre-heat the skillet and use some coconut oil.
- I find it is best to plop the pancake batter right on a pool of coconut oil.
- If using a griddle, pre-heat to 300 degrees.
- The key to making these delicious pancakes is to only flip them once.
- Make sure there are lots of bubbles on top before you flip!
- These can store in the refrigerator for up to one week.

Tips for Using Cast Iron Skillets
You may have noticed that around here I'm a big fan of cast iron skillets. That may be one of the reasons I have an entire cookbook full of them! I love making pancakes on skillets, but there are a few rules and tips for making it a successful experience.
- Make sure your skillet is preheated.
- Add a dollop of coconut oil to the skillet
- Place the batter in the middle of the pool of coconut oil.
- Only flip when there are ample bubbles on the uncooked side.
- Only flip once to prevent sticking.
