Around the mid-west, USA, potluck gatherings are a summer tradition that does not die! We love our gatherings that are filled with food, family, friends, and lakeside fun. Every gathering that I can remember growing up had some sort of Jell-O fluff salad displayed on the food table. It was one of the first things I would grab and one of the only things I would go back to for seconds.
The only problem is that Jell-O whipped salads are overpowering with sugar, chemicals, and things that I simply do not wish to place in my body anymore. What's a Trim Healthy Mama or Keto lady to do?!
There's a simple solution! Make something better!
The foundation of any Jello salad is gelatin. You are going to want a sustainably sourced gelatin-like Trim Healthy Mama's Just Gelatin option. If you use Knox unflavored gelatin, it will work just fine, but keep in mind that it is pork-based instead of beef-based.
As the name would suggest, it is truly just gelatin, completely organic, and 100% beef. Good gelatin will also help to balance amino acid profiles. Because of its hydrophilic nature, gelatin attracts water and forms a healing layer in the digestive tract. Gelatin that is responsibly sourced will be a gut healer instead of a gut destroyer.

This is because collagen does not have the ability to gel up like gelatin does! You can replace collagen with gelatin, but you cannot replace gelatin with collagen. Fascinating stuff!

Ingredients for the Blackberry Jello Salad
This is going to be a little bit more of an involved recipe, so hike up your sleeves, and let's dig in!
The ingredients you will need for the sugar-free jello salad:
- Gelatin
- Cool water divided
- Boiling water
- Tea bags (hibiscus or another fruity flavor)
- Blackberries (frozen or unfrozen)
- Stevia blend (THM Gentle Sweet or Swerve), divided into ¾ cup and ¼ cup
- Heavy whipping cream
- Blueberries (frozen or unfrozen)
- Fresh Blackberries for garnish

Instructions
In a small saucepan, add 1 cup of cool water.
Sprinkle the gelatin over the water and let it bloom.
Combine 1 cup of boiling water and the tea bags. Let it brew.
Combine the blackberries, ¾ cup stevia, and 1 cup of cool water to a blender.
Puree until completely liquefied.
Set aside.
Remove the tea bags and pour liquid into the saucepan with the gelatin.
Heat over medium heat to completely dissolve the gelatin.
Once dissolved, immediately remove from heat.
Add the gelatin mixture to the blender puree and combine thoroughly.
Pour into an 8x8 baking dish.
Let set in the refrigerator until firm, about 1-2 hours.
Once the gelatin is firm, cut into bite-sized pieces and scrape it into a large bowl.
Meanwhile, in a stand mixer, add 1 pint of heavy whipping cream and ¼ cup stevia blend.
Beat until it firms.
Add the whipped cream to the gelatin, and fold in blueberries.
Garnish with blackberries.
Best if refrigerated until served.

This will stay good in the refrigerator for approximately one week. After that time the whipping cream will start to get watery.

This sugar-free jello salad is made with detoxifying teas and beautiful gelatin that can heal the gut! If you are dairy-free the extra whipped cream can be replaced with something more suitable for you. You can also enjoy just the gelatin part of this recipe and omit the whipped cream for a great snack option.

Tips and Tricks for this Recipe
Make sure you leave enough time for the gelatin bites to completely set. After you fold in the blueberries and whipped cream, I like to have it in the refrigerator for about another 1-2 hours, but if necessary, you can also serve it immediately.

Depending on the stevia blend you use, the amounts may need to be adjusted. I recommend using THM Gentle Sweet.Hibiscus tea bags are quite delicious, but you can use other tea bags to flavor your gelatin. The first time I made this I used a Cranberry Rooibos tea and it was FANTASTIC!
