Truthfully, I had forgotten about how good a batch of French toast was until recently! I had a large loaf of my sandwich sourdough bread that had sat out just a tiny bit too long and was getting a wee bit stale. I was wondering if I was going to turn it into bread crumbs, feed it to the chickens, or find something else to do with it when I suddenly remembered how amazing French Toast was!
We spent the next week as a family eating lots of French Toast and enjoyed every bite! This recipe is a THM crossover.
This recipe is completely Trim Healthy Mama friendly if you use plan-approved sourdough bread and toppings.

Ingredients
Most likely if you are living a sugar-free or THM lifestyle, you will have all these ingredients! The only thing that you might not have on hand is the sourdough sandwich bread. Here is the recipe that I use. However, you can use any recipe that you choose.
- Sourdough Sandwich Bread
- Eggs
- Gentle Sweet
- Unsweetened Almond Milk
- Cinnamon

Instructions
Mix all the ingredients except the bread together in a large bowl. Slice bread into about ¼ inch thickness.
Soak the bread in the egg mixture for at least one minute. Flip after 30 seconds. If the bread is older or stale, adjust the time to allow it to soak longer.
Heat a cast iron skillet to medium heat. And place the French toast in the skillet. Heat until golden brown (2-3 minutes). Flip and repeat.
Serve with sugar-free syrup, maple syrup, honey, berries, stevia-sweetened whipped cream, peanut butter, or butter!
Hint - If your cast iron skillet gets burned on French toast, once you have all your bread cooked, turn it on high and use a metal spatula to scrape all the burned pieces off. Washing it will be a breeze now!
Substitutions

Variations
Make different variations of the French Toast by adding different toppings! Here are some of my favorites
- Maple Syrup - you can use Maple Syrup on THM, but here is an FP option if you wish by Country Girl Cookin'.
- Berries - Use frozen or fresh berries! The best is straight outta the grade in my opinion.
- Whipped Cream - I love whipped cream on my pancakes, waffles, and sourdough French toast. Just use heavy whipping cream, add Gentle Sweet, and whip until the consistency that you like.
- Peanut Butter - My husband loves to have French Toast with peanut butter and honey. My friend Koach Kanada has a wonderful THM-approved peanut butter that you can try.

Storage
These will freeze well if stored in an airtight bag or container. Make sure you get as much air out as possible. Store in the freezer for up to 6 months. Store in the refrigerator in an airtight container for up to one week.
Top tip
Don't forget to soak your bread! I love soaking my bread for an extended amount of time. I think that it gives the French Toast the best flavor. My preference is to let the bread soak in the egg mixture for a minute or longer!

Can I use Gluten Free sourdough bread?
Yes, if you are living the THM lifestyle, just make sure that it is plan-approved. Gluten-free bread of any kind tends to absorb liquid faster so I recommend you reduce the amount of time you soak the bread.
Can I use an electric skillet?
Yes, the recipe will not change at all if you use an electric skillet.
Does sourdough bread make good toast?
Absolutely! I love taking this recipe and throwing it in my toaster during the week for a quick go-to meal.
