Since I was a little girl, the only thing that I have consistently wanted every year for my birthday was a chicken salad for dinner. Years later, I now make a low carb chicken salad that I can never quite get enough of!
My mom used to make me my chicken salad every year and to this day, I still whip some up every year. There is nothing like the delectable taste of grapes, chicken, and dressing to bring me right back to my June birthday.
There was a time at the beginning of my Trim Healthy Mama journey when I thought eating my traditional chicken salad was going to be a thing of the past. Turns out that a low-carb chicken salad with grapes can not only be on plan but can still taste like the chicken salads I remember from my early childhood birthdays!

There are two versions of this salad, the first is with noodles, which is how I remember eating it as a child. The second version is without noodles. Truthfully, I usually splurge for my birthday and include some Dreamfield noodles in my chicken salad to make it even more similar to that recipe that I remember from childhood.
However, this recipe is not going to include the pasta option. This is truly a low-carb option!
Ingredients
- Shredded chicken
- Walnuts or almonds
- Grapes
- Shredded cheese
- Celery, chopped
- Green onions, sliced
- Sunflower seeds (optional)
Dressing
- Mayo (homemade preferable)
- Plain Greek Yogurt
- Apple cider vinegar
- 2 teaspoon Gentle Sweet
- Dried dill weed
- Garlic powder
- Onion powder
- Mineral salt
- Black pepper
Instructions
Cook and shred chicken
Mix the dressing up.
Add mayo, Greek yogurt, Gentle Sweet, and apple cider vinegar together.
Chop celery, halved grapes, and sliced green onions. Place all the ingredients except the dressing, almonds, or walnuts in a bowl and combine.
Add the dressing and gently mix in.
Top with walnuts or almonds. Chill in the refrigerator for at least two hours or until ready to serve.

Tips
- Use your instant pot to cook the chicken breasts. This makes the chicken fall apart very easily to shred!
- If you do plan to use Dreamfield pasta, increase the amount of mayonnaise you use. Remember that homemade mayonnaise is preferable for this recipe to keep it as healthy as possible. THM has a wonderful body-burning mayonnaise that is excellent.
- You can use onion in place of green onions if preferred.
- Keep the grapes to about a cup, which will be just enough for a sprinkling of flavor and still in THM S mode.
- I love adding sunflower seeds on top of the salad, but that is completely optional!

Can I use Dreamfrield Pasta?
I encourage you to do your own research on the reliability of Dreamfield as a healthy carb, but I have done my own research and have decided that I can safely use Dreamfield Pasta on my Trim Healthy Mama journey.
Is Chicken Salad Healthy?
It sure can be! Be sure to use as many wholesome ingredients as you can with this recipe. The homemade mayo is certainly preferable, but if you need to use store-bought, find some without corn syrup and added sugars.
If you do not include the Dreamfield pasta, you can put it on a bed of greens or inside a low-carb wrap. This would make it both THM and Keto-friendly!

- 1 cup walnuts or almonds
- 1 cup sliced grapes
- 1 cup shredded cheese
- 4 stalks of celery, chopped
- 5 stalks of green onions, sliced
- Sunflower seeds (optional)
Dressing
- ½ cup mayo (homemade preferable)
- ½ cup plain Greek Yogurt
- 2 tablespoon apple cider vinegar
- 2 teaspoon Gentle Sweet
- 1 teaspoon dried dill weed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon mineral salt
- ½ teaspoon ground black pepper
Instructions
