This avocado cucumber salad is a summer favorite that will have your taste buds zinging with the delightful tastes of cucumber, avocado, dill, and creamy feta. It's an easy recipe that is easy to memorize and is almost always gone too fast!

This was a family favorite recipe last summer in 2022. I was pregnant with our third son and was constantly wanting cooling and easy recipes to whip up with little effort. Between this avocado salad and my easy peasy pea salad, we were pretty much eating these weekly!
Fast forward to March of 2023, and winter has seemed to drag on for an absolutely ridiculous amount of time. Not to mention that we are buried under 79 inches of snow, which is the 4th snowiest winter on record here! We have all been feeling extra 'cooped' up.
This salad was the perfect way to bring a tiny bit of summer into our kitchen!

Ingredients
You will want your avocados quite soft, but not so soft that they just become smushy when you chop them up. It's a hard balance to find! If you have avocados that are too hard, you can simply ripen them over for about a day in a dark area like inside a brown paper bag. This usually does the trick for me.
- English Cucumbers
- Avocados
- Feta Cheese
- Lemon
- Olive Oil
- Dill Weed
- Salt

Instructions
Chop both English cucumbers. I like to chop mine into about ½-inch cubes.
Chop avocados into small pieces.
Mix both avocados and cucumbers in a large bowl.
Add Feta cheese and stir again.
In a small bowl mix the olive oil, dill weed, and salt. Pour over the salad and mix again.
Chop the lemon in half and squeeze over the salad.
Hint: If you are not going to serve the salad for a few hours after you make it, don't add the salad! Directly sprinkle the salt over the salad right before serving. This will keep the cucumbers from wilting and becoming overly juicy.
Variations
There are many ways to vary this recipe. Here are two variations that we frequently do with this recipe.
- Goat Cheese - A fun way to vary this recipe is by adding goat cheese or replacing the feta with goat cheese.
- Kid-friendly - If your kids don't like avocados, you can simply add the avocados last and take some of the cucumber salad out for them. However, I also find that my kids are more likely to eat the salad as is if I make it into a 'dip salad' for them and serve it alongside some corn chips. I prefer buying Tostios Baked chips, but they certainly have been hard to find lately in stores.

Storage
Unfortunately, this salad does not store very well. The avocados will brown quite fast and the extra water liquid from the cucumbers will eventually make it a sloppy mess. However, if stored in an airtight container in the refrigerator it will typically last for 2-3 days.

How do I keep the cucumbers from becoming too juicy?
Don't add the salt until right before serving. If you are going to chill the salad before serving, keep the salt out of the dressing and pour it over right before serving. This is a nice trick for keeping the cucumbers fresh and keeping all that moisture in the crunch cucumbers!
Do you have to peel cucumbers?
Certainly not! Although I could see how some children might prefer it. If you want all the benefits of cucumbers, make sure to leave the skin on because there are some lovely nutrients like fiber in the skin.

- 1 lemon
- ¼ cup olive oil
- 1 tablespoon dill weed
- 1 teaspoon salt
Instructions
- Chop both English cucumbers. I like to chop mine into about ½-inch cubes.
- Chop avocados into small pieces.
- Mix both avocados and cucumbers in a large bowl.
- Add Feta cheese and stir again.
- In a small bowl mix the olive oil, dill weed, and salt. Pour over the salad and mix again.
- Chop the lemon in half and squeeze over the salad.
Notes
When you squeeze the lemon over the salad, watch for seeds! Alternatively, you can squeeze the lemon into a dish, remove the seeds, and then pour it over the salad.
