It was sometime last year that I started to see reels and stories on Instagram that were all about egg yolk coffee. I was intrigued. Why? Turns out there are a lot of benefits to raw egg yolks. As you will hear me say throughout this post, please do your research and come to your own conclusions about drinking egg yolk coffee. However, here are some of the benefits that I read about:
- It can stabilize blood sugar
- Increase metabolism
- Increase progesterone
- Positive mood booster
These were some of the benefits that made me want to try an egg yolk coffee and truthfully, I'm glad I did because it is simply creamy and delicious!
Plus there is something awfully special about heading down to my chicken coop, grabbing some farm-fresh eggs, and then making a delicious recipe!
Ingredients
I like this recipe as a treat, but not as an everyday enjoyment. I know plenty of people over on Instagram who make it every day though!
- Espresso
- Egg Yolks (farm fresh)
- Gentle Sweet (or stevia blend)
- Honey
- Collagen (optional)

Instructions
Add two egg yolks into a mug.
Make a double espresso shot and pour over the eggs. Use a frother or your espresso machine to whisk and froth.
Add warm almond milk
Add Gentle Sweet and any other remaining ingredients (add your variations at this point).
Sprinkle cinnamon over the top.

Variations
The sky is the limit on the variations that you could do with this recipe. Here are a few ideas.
- Add flavoring - THM Caramel Extract is phenomenal with this recipe
- Add collagen or protein powder for an extra boost of protein
- Use one egg yolk instead of two

Equipment
An espresso machine is nice to have around for this recipe to get a good espresso shot and froth formed. However, you can easily make this using a strong cup of coffee and a frother. Use what you have!
We have a very basic espresso machine that I found at Walmart on sale for $15 (it's not even available anymore), but for a couple of years now I have had on my wish list the Wirsh espresso machine which is extremely economical to purchase and get's great reviews.

FAQ
Are raw eggs safe?
One thing that I have not covered yet in this recipe post is that if you are using a good espresso machine you will be heating the egg yolks just by pouring the espresso over them. I have read other recipes that claim this is enough to destroy any unwanted bacteria. I'm honestly skeptical if hot espresso will do that, so please do your research.
However to answer the question, that depends on who you ask. I'm not going to answer that question here, because I am not qualified to speak to this in any academic sense. I can state, however, that I do not have an issue with raw eggs if they are farm-fresh.
Does egg coffee taste good?
This recipe will taste similar to coffee recipes that use sweetened condensed milk. It will have an intense sweetness to it, without all the 'ick' of canned milk. It tastes very good.
