I have a confession. I am pretty good with staying on the Trim Healthy Mama bandwagon, but there are times when the ease of grabbing something at the grocery store that is 'close' to on-plan is just too easy to pass up.
There is a certain store around me that has pre-wrapped bacon chicken and they do grocery pick-up. You've got to believe that those things have come in handy when the week gets long, the kids are crabby, and Mama just wants to go home.
Yet, the problem is that there are two ingredients way down the line of ingredients that are certainly off-plan on THM. I've let it slide far too long and decided that it was time to come up with an EASY (that's the keyword here), let's repeat, easy bacon wrapped chicken recipe.
Another confession...these turned out way better than I could have ever hoped for! This easy bacon wrapped chicken is astounding! It tastes too good and the sauce is completely on-plan with Trim Healthy Mama!
Here are three reasons to make this easy bacon-wrapped chicken!
- High in protein
- Low Carb
- Easy to make in less than 1 hour!
- Delicious
Okay, I admit that was four reasons; I just had to stick that last one on there for good measure.

Instructions
The process of making the wrapped chicken is quite simple. However, you will spend some time wrapping the chicken.
Mix the amino acids, parmesan, liquid smoke, and mineral salt together in a bowl.
Start wrapping the bacon by taking one chicken tenderloin and one strip of bacon. Starting on the edge of the chicken wrap the bacon across the chicken.
After you have finished, use a basting brush to cover the bacon and chicken with sauce.
Bake at 425 degrees F for 30 minutes. For the last 3-5 minutes broil to add extra crispiness!
Hint: You can also use your air fryer with this recipe, which gives it a lovely crispness!
Equipment
In addition to the ingredients, I recommend using a cooking brush to spread the sauce.
- Baking Sheets
- Cooking Brush
- Knife
- Bowl for mixing

The Key is the Sauce
The sauce to these is key to the success of this recipe! There is almost no complicatedness to the sauce, just grab the ingredients and mix them together. The first time I tried the recipe, I literally used the basting brush to mix the ingredients. Now that's a lazy moment!
The Braggs Amino Acids will make this recipe quite a bit salty. If you have never tried Braggs Aminos, it is a much better alternative to soy sauce and is completely non-GMO. It can be used in a variety of recipes to create sauces or add a flavor punch! This small jar is a great way to get a taste of it before buying the larger container.
FAQ
Is Bacon on Plan with Trim Healthy Mama?
You may be asking if bacon is on plan with Trim Healthy Mama? The answer is yes. Some women choose not to use bacon due to personal or religious reasons. The THM authors do so, but readily admit that bacon can be used on plan. It is more 'unclean' meat, so just be aware and do your own research.
If you feel uncomfortable with bacon, you can use any variety of alternative bacon with this recipe as well.
Speaking of bacon, have you seen My Montana Kitchen's Bacon Poppers? They are amazing!
How do you wrap the bacon?
One of the nice things about using tenderloins instead of chicken breasts is that the wrapping of the bacon does not need to be perfect. When using a thicker cut of meat, you will want to single-layer wrap your bacon to ensure that everything cooks properly and is at the temperature.
Chicken tenderloins, cook so fast that the bacon can be layered a little bit more loosely.
I like to start at one end of the chicken and try to single-layer wrap the bacon around the chicken until I get to the other end, but if you end up stacking the bacon up a bit (as pictured) it will really not affect the cooking process. Broiling the easy bacon-wrapped chicken at the end of the cooking time will also help the bacon to look nice and well done when you serve it.
