It's the perfect blend of spice that most kids will probably like it too! My toddlers don't like a lot of spice and they gobbled this up like it was candy!
Preheat oven to 350 degrees. Combine the mayonnaise, sour cream, goat cheese, whipping cream, hot sauce, and seasoning in a bowl.
In a 9x12 baking dish layer the chicken.
Continue layering the broccoli, riced cauliflower, and spinach.

Why did I use goat cheese? Can I tell you the honest truth about this? It was because I didn't have cream cheese! I tried it and it changed the entire flavor of the dish. So much so, that I created the recipe specifically because of the flavor that the goat cheese added. After I made it for some guests and had multiple people ask for the recipe, I knew this one was a winner.
You certainly could substitute cream cheese for goat cheese, but you would be missing out on what this Buffalo Chicken Casserole has to offer. You're going to want to find that goat cheese, it's that delicious!
How much Hot Sauce do I use?
For this recipe, I recommend Franks Red Hot sauce. I find that it has the most 'family friendly' taste out of all the hot sauces out there. My kids truly did gobble this dish up and they don't particularly like things too spicy. If your family likes hot sauce, you can add up to a cup of hot sauce to this recipe. It will change the consistency a little bit, but not enough that you will need to adjust any other ingredient amounts.
