Winters mean that it's time for casseroles! Not that casseroles can't be enjoyed throughout all the seasons, but there is something about the cooler seasons that make casseroles seem more appropriate.
I love casseroles they just make life easier! Casseroles are typically easy to make ahead of time, which means I can make them before work and then bake it when we get home. They also are typically freezer-friendly, which means I can make multiple dishes and freeze what we don't use.
My favorite part of casseroles is that they are usually a dump-and-go type of recipe. This means I can dump or layer all the ingredients in one dish and bake away!
Ingredients
- 1 pound cooked and diced chicken
- ¼ cup mayonnaise
- ¼ cup sour cream
- 4 ounces softened goat cheese
- ¼ cup hot sauce
- ¼ cup whipping cream
- 1 12-ounce bag of broccoli florets (frozen)
- 1 10 ounces bag of riced cauliflower (frozen)
- 1 10 ounces bag of spinach (frozen)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Shredded Gruyere cheese for topping (optional)
Instructions
This recipe is a dump-and-go recipe. Although the ingredient list looks long, don't be fooled! All you need to do is layer all the ingredients, mix the sauce, and pour it on. It's the perfect blend of spice that most kids will probably like it too! My toddlers don't like a lot of spice and they gobbled this up like it was candy!
Preheat oven to 350 degrees. Combine the mayonnaise, sour cream, goat cheese, whipping cream, hot sauce, and seasoning in a bowl.
In a 9x12 baking dish layer the chicken.
Continue layering the broccoli, riced cauliflower, and spinach.
Spoon the sauce mixture over the layered ingredients. Bake at 350 degrees for 45 minutes.
For the last 10 minutes, you can remove the dish and sprinkle shredded gruyere cheese over the top.
Place back in the oven for the remaining 10 minutes.

FAQ
Can I use other cheeses in this dish?
Why did I use goat cheese? Can I tell you the honest truth about this? It was because I didn't have cream cheese! I tried it and it changed the entire flavor of the dish. So much so, that I created the recipe specifically because of the flavor that the goat cheese added. After I made it for some guests and had multiple people ask for the recipe, I knew this one was a winner.
You certainly could substitute cream cheese for goat cheese, but you would be missing out on what this Buffalo Chicken Casserole has to offer. You're going to want to find that goat cheese, it's that delicious!
How much Hot Sauce do I use?
For this recipe, I recommend Franks Red Hot sauce. I find that it has the most 'family friendly' taste out of all the hot sauces out there. My kids truly did gobble this dish up and they don't particularly like things too spicy. If your family does like hot sauce, you can go up to a cup of hot sauce in this recipe. It will change the consistency a little bit, but not enough that you will need to adjust any other ingredient amounts.
