Living a sugar-free lifestyle became a bit hard in the last month of pregnancy. No matter what I tried I only could get Wylder to kick when I ate sugar.
I tried drinking kombucha, eating mangos, and other types of natural sugar and he would be still. The second I swallowed any sort of sugary substance he would start kicking up a storm. It was a good way for him to make his mama a wee bit crazy. It was also a good way to get my Trim Healthy Mama journey a bit derailed.
But getting a good kick count was worth my mental peace during that last month. So I succumbed to eating a bit of sugar each day to get him to kick.
On the way to work, it became a 'pregnancy tradition' for me to stop by our local coffee shop, and get a decaf coffee, and monster cookie. I would eat my cookie, the kid would come to life, and I would get my 'kick counts' for the day within a few minutes. Then he would settle down and I would barely feel him again.
That first time I ate those monster cookies to get him to kick, a sugar headache just about took me down. But as it is with sugar, my body quickly became used to it.
After having Wylder I've been detoxing from sugar again and found myself still with my 'monster cookie' cravings. These sugar-free monster cookies with sourdough are so good and taste close to those sugar-filled ones I ate during pregnancy!

Why live a sugar-free lifestyle? This blog is filled with reasons why living a sugar-free lifestyle can be beneficial to our health. There are two types of 'sugar' that we consume on a daily basis; fructose, and glucose. You can read more about it in my "Best Natural Sweeteners" article, but here is the gist of it:
Fructose is naturally found in many plants like fruits. Most of the sugars found in processed food contain a combination of fructose and glucose which is primarily found in sucrose which usually comes from highly processed corn syrup. So while our sweet foods are originally derived from a natural source it is manipulated to a form our body cannot process well. Subsequently, our body gains weight, has health problems, and deals with uncontrollable blood sugar issues.

- Important - If you want your cookies to mound up and not spread out as much when cooking, put the dough in the refrigerator for 2-3 hours. If you don't mind your cookies spreading out a bit, use the dough at room temperature and make much smaller cookies on the baking sheet. They will spread out when baked.
- You will want to use a sugar-free chocolate chip alternative. Bake Believe or Lily's Chocolate Chips are my personal favorite. Use extra chocolate chips if you want more chocolatey goodness!
- I recommend using rolled oats instead of quick cooking oats (quick oats) because the cookies will hold their structure better.
- You can use sourdough discard for this recipe. To be THM plan approved sourdough items need a 7-hour room temp ferment or a 24-hour fridge ferment. 1-hour room temp equals 3.5 hours in the refrigerator. If you want the best flavor out of these cookies, I find that using an active sourdough starter works best.
- Any combination of white, semi-sweet or, dark chocolate chips will work for this recipe.
- Use natural peanut butter and creamy peanut butter for the best cookies!
- Add a little bit of sea salt on the tops of the tops of the cookies for a sea salt monster cookie!

- Swerve Brown Sugar
- Oats
- Baking soda
- Mineral salt

Note- If you want to make these gluten free monster cookies, you will need to use gluten free oats
Instructions
Preheat oven to 350 degrees. Combine wet ingredients. Mix well.
Combine dry ingredients. Mix well.
Combine wet and dry ingredients.
Drop large "monster cookie plops' onto greased baking sheets.
Bake for 10-12 minutes. Immediately place on a cooling rack.
You will know your cookies are done when they are golden brown around the edges.

If you want your cookies to mound up and not spread out as much when cooking, put the dough in the refrigerator for 2-3 hours. If you don't mind your cookies spreading out a bit, use much smaller dollops of dough on the baking sheet because they will spread out when baked.
Storage
Leftover cookies are best stored in the refrigerator in an airtight container. These cookies easily freeze as well.
You can also freeze the dough in pre-made mounds. Place the pre-made mounds on a cookie sheet, freeze on the baking sheet, and then store in a plastic baggie for up to three months.

Making sure I understand, I need to mix the cookies and place in the fridge for 24 hours for it to be THM approved, and then bake?

The part that refers to the 24 hr fridge is just for thm reference and was not referring to any part of the instructions. In retrospect that could have been confusing.
The recipe just calls for fed sourdough starter or discard, which would mean the it would have been fermented already. The dough does not need to be placed in the refrigerator to be plan approved.
